Manchego PDO is one of the most popular and well-known cheeses from mainland Spain, it has been produced since 1984, and authentic Manchego can only be made exclusively from the whole milk of Manchega sheep, raised in the La Mancha region.
A firm but crumbly texture and a nutty flavour makes it great on a cheese board or alongside your favourite Spanish Charcuterie just add the sweetness from Membrillo (quince) that goes so well with this Spanish cheese.
The cheeses are aged between 60 days to 2 years, younger versions of Manchego have aromas of slightly sour cream and cheesecake and sweet, zesty flavours with notes of grass, fodder and fruit.
The Comte is great for sandwiches, cooking or on a cheeseboard. Our recommendation? Try it with Butter Wholemeal Crackers, Hawkshead Chillililli and Lime and Chilli Fruit Puree.
