Free-range duck breast from Sladesdown Farm near Ashburton in Devon is cured in brine flavoured with thyme, juniper berries, black pepper, honey, maple syrup & port. It is then cold smoked over beechwood before being sous-vide to keep the meat juicy and succulent.

You can serve it with a salad for an elegant starter. It goes particularly well with sweet fruit.

Try it with our Fig Fruit Puree or Hawkshead Fig & Orange Jam!
